Pumpkin Chai Bread

Pumpkin Chai Bread
Makes one loaf

3/4 cup sorghum flour
1/3 brown rice flour
1/2 cup potato starch
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1 teaspoon xanthan gum
1 teaspoon ground cinnamon
1/2 teaspoon cardamom
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves

1 cup puréed pumpkin (fresh or canned)
1 cup light brown sugar
1/2 cup butter, melted
1 tablespoon grapeseed oil
1 teaspoon vanilla extract
2 large eggs



Preheat oven to 350 degrees F.

1/2 cup walnuts, chopped (optional)

In a large mixing bowl whisk together all dry ingredients.

In a smaller mixing bowl, whisk together wet ingredients until smooth.

Slowly add the wet to the drying, folding it in with a rubber spatula.

Fold in chopped walnuts, if desired.

Pour batter into a greased loaf pan.

Bake for 50-60 minutes. To test, poke a toothpick into the center of the loaf. If it comes out clean the bread is ready!
